Rice Krispie Pumpkin Treats

  • 6 cups rice krispies cereal
  • 3 Tbsp salted butter
  • 1 (10 oz) pkg. mini marshmallows
  • Orange gel food coloring
  • 3 pretzel rods,  broken into 2-inch pieces
  • 1 tube green dessert frosting
  • Non-stick cooking spray

  1. Pour cereal into a bowl.
  2. Melt butter in a 4 quart non-stick saucepan or pot over medium-low heat.
  3. Add marshmallows and stir until they  melt. Add the gel food coloring. Stir constantly until marshmallows are melted.
  4. Remove pan from heat and immediately add mixture to the cereal.  Gently stir and fold with a spatula until cereal is evenly coated. Let mixture cool slightly until you can handle it.
  5. Spray hands with non-stick cooking spray then shape the cereal into balls about the size of a baseball.  Insert 1 piece of  pretzel rod into the top of the ball and reshape it to look like a pumpkin. Transfer pumpkins to a plate or dish lightly coated with cooking spray.
  6. Use green frosting tub with decorator tip to create leaves or vines at the base of the pretzel stick on top of each pumpkin.
  7.  Store in an airtight container.
