Zesty Sliced Carrot Side Dish: A Cool Complement

I serve as one tenth of a delightful group of card sharks (haha!) who play Slide Bottom Gin on the first Friday of each month. Each pair rotates hosting the cutthroat event in their respective homes, and everyone contributes to the host’s entrée—as well as to the jackpot. One of the more formidable players, Charlene H., contributed the following delectable carrot side dish at the last gathering at my home. Carrots never tasted so good! I simply have to share her recipe, which I highly recommend especially in these hot summer months. A delicious and refreshing addition to any picnic, BBQ or dinner party.


Zesty Sliced Carrot Side Dish


7 carrots thinly sliced on the diagonal

1 teaspoon sugar

1 teaspoon salt

1 package Good Seasons Italian dressing

5 green onions sliced

1 heaping teaspoon chopped parsley



Add four cups water to medium saucepan. Add sugar and salt. Bring to a boil. Add carrots and bring back to a boil for three minutes. Drain and set aside to cool in a large bowl.

Meanwhile, mix Good Seasons Italian dressing (prepared re directions on the package) and reserve half. Add the other half of the Italian dressing to cooked carrots along with the green onions and parsley. Refrigerate for 24 hours. Lightly drizzle with some of the remaining Italian dressing and toss before serving.
