Right off the bat (or the bar in this case), you need to know and like your Scotch well in order to appreciate this shot of Penicillin that boasts a floater of Laphroaig, which is considered one of the most strongly flavored of all Scotch whiskies.
The ten-year old whisky has a peaty/smoky flavor and is reputedly the Prince of Wales favorite brand of Scotch. The Laphroaig Distillery is located at the head of Loch Laphroaig on the south coast of the Isle of Islay.
- 2 oz blended scotch
- 1 oz lemon juice
- .5 oz honey syrup (equal parts honey and warm/hot water well mixed )
- .5 oz ginger syrup
- .25 oz Laphroaig scotch
Shake the blended scotch, lemon juice, and syrups with ice and strain into a double old fashioned glass with a single large ice cube. Pour Laphroaig over the back of a bar spoon so that it floats atop the drink, and finish with a lemon wheel.
