Scáiltín: An Irish Egg Nog

Snuggle up to your favorite leprechaun with this wonderfully Irish version of eggnog.  Who needs dessert when you can sip and savor this delicious concoction? There is something in the Irish whiskey that makes you believe in the pot of gold at the end of the rainbow.

Irish Eggnog: Scáiltín


2 cups whole milk

1/2 cup Irish Whiskey

1 tablespoons honey

1/8 teaspoon ground ginger

1/8 teaspoon ground cinnamon

2 pats of Irish butter

freshly grated nutmeg, to garnish



Pour the milk and whiskey into a small saucepan and stir in the honey, ginger and cinnamon.

While heating on low, whisk the mixture briskly to create a froth: DO NOT LET IT BOIL.

Pour into two warm mugs, top with a pat of butter and sprinkle with grated nutmeg.
