Irish Potato Candy: No Spud About It

Sure and I have a wee bit o Irish in my genes from my deceased (may she rest in clover and peace forever) maternal grandmother, Alice Mahoney from County Clare, Ireland. Long before St. Patrick’s Day appears on the calendar I begin to crave corned beef, cabbage and potatoes. I love to cook but a baker I am not. I leave the flour, sugar and yeast to others. But, here’s a recipe for Irish Potato Candy that even a tipsy leprechaun would have no problem making. The little “spuds” are adorable and yummy! They’ll be the perfect complement to my corned beef, colcannon and Irish soda bread.




  1. In a medium bowl, beat the butter and cream cheese together until smooth. Add the vanilla and confectioners’ sugar; beat until smooth. Using your hands if necessary, mix in the coconut. Roll into balls or potato shapes, and roll in the cinnamon. Place onto a cookie sheet and chill to set. If desired, roll potatoes in cinnamon again for darker color
